Thai Peanut Sauce

Cort and I are HUGE fans of anything with 'Thai' and "peanut" in the same recipe title. We tried this today and it's awesome on pretty much anything- noodles, salad, chicken, veggies... if you want to make a salad dressing, add an extra 1/4 cup of water to it after you've mixed everything together.

4 cloves fresh garlic
juice of 1/2 lime
1/2 c. creamy peanut butter
1/4 c. ketchup
1/4 c. soy sauce
1/4 c. light brown sugar
2 T veggie oil
4 t. grated fresh ginger
1 T. red vine vinegar or cider vinegar
1 T. Onion powder
1T. sesame oil
1/2 t. crushed red pepper flakes

1. Peel garlic and puree in blender.
2. Pour lime juice into blender. Stop blender and add remaining ingredients and pulse until just combined. Scrape down sides of blender and pulse a few more seconds. All done! keep in the fridge for a week or freeze for a month!
